I have used this knife several times. From cutting 80 lbs of Top Round meat for stew to cutting thru heavy vegetables like carrots and turnips. I love the overall balance of the knife and the comfortable shape of the handle. The blade is extremely sharp so I have to be a bit more mindful of my fingers. In fact my wife is calling me now to come help her with some slicing and dicing. LOL, I am the only one who gets to use them.
My first time using the knife was to cut tomatos. Slices pristine thin tomatoes easily with little force. The weight was great...it naturally went down on its own with little force. I tend to like my knives heavier. Only complaint that I might have is that it’s only one sided. Meaning the blade of the knife is on one side so might be difficult to sharpen it. But I’ll find that out later on once it’s start to dull. I previously bought the three knife set before I got this chef knife. Personally, I think all you need is a chef knife. I do a lot of Asian cooking and that’s just my opinion. Glad I got the other three as back up. I don’t plan to cut bones or anything hard like that as to keep my knives in good shape. It claims to have lifetime warranty so we’ll see bout that. Instruction was to was and dry after use which is what I did. I put it away in the box after each use as well and do not allow my kids to touch them. Overall...I am very pleased with the purchase and the sale price amazing. So ..no more buying cheap knives and throwing them away each month. This is one of your must have tool if you are a cook. It certainly passed my tomato test.
