The Nakiri vegetable knife is 7 inches long, the slicing knife is 8.5 inches long, and the utility knife is 5 inches long. Each blade is carefully tapered on one side and hollow ground on the other. It's time to step up your game

I bought these knives in April. They were delivered at the end June per the marketing at the time. These are very nice knives. The blades are thick with a chiseled edge--meaning that the left side is straight while the right is beveled. The edges are properly sharpened, however you will need to hone them. You hone them with a honing wand. Mine is a 1200 grit ceramic wand. Most stores sell 600 grit steel wands. Although I have a steel wand, I have only used the ceramic wand on these knives. Once honed--be careful--the blade is very sharp. I regularly use the Santoku knife for most of my cutting. I tend to cook vegetarian meals, so I do a lot of chopping. The Santoku knife is excellent at mincing whether garlic, ginger, or jalapeños. I have another Japanese knife with a thinner, traditional duel beveled blade. I find this knife is easier to cut thin slices of onion of the same thickness. The chiseled edge of the Kamikoto knives and the thickness takes a bit more getting used to. The other knife I use a lot is the paring knife or the small utility knife from the Kanpeki set. This knife is a dream. It's a bit weightier than my other paring knives--and that's good. After a few strokes on my honing wand, it quickly dispatches of tomatoes of even the thickest of skins. This is truly a culinary weapon! After nearly 3 months of use, I have yet to sharpen any blade. I will confess also to not putting these knives in my kitchen drawer. They remain hidden in their boxes behind seldom used pots and pans. The other--shall we say--unmentioned family members are not invited to use my newest and favorite kitchen devices. While I believe these knives can stand up to just about anything, I have yet to have them put to the test of my twelve-year-old or my wife. Yes, similar to a BMW M3, while I have thrown them in the corners myself--so to speak, I have yet to let anyone else drive them. The other knives of the Kanpeki set: the vegetable and sushi cutting knives do not get as much use in my kitchen. For vegetables, I prefer the Santoku. That said, the long thin Kanpeki knife is great for cutting raw fish when I do that. So to wrap up, if you are in doubt because of the price, I was too. But I decided to take the plunge. At the discounted price, the knives are well within my price range. I'm very happy that I did. I'm happy with the overall quality and characteristics of the knives. They are different from any knife that I've owned and I am still going through a learning curve. I recommend getting a ceramic honing wand if you don't have one already and hone the blade before each use. Other than that, for this "weekend warrior cook" I'm very happy that I made the purchase. The best knife on the market

I can't believe how sharp these knifes are!!!! I love using these knifes to trim the fat off the brisket. I don't even use my Henkel knifes anymore.

Great Blade, Amazing Quality
